Cheesy Italian Chicken Spaghetti Squash Casserole

This looks like a fun Italian alternative! I love when the recipes are created for one lean & green serving. It’s so nice to not have leftovers!

Ingredients:

• 1 cup (5.46 oz) prepared Spaghetti Squash (2 greens)
• 1/2 cup (3.17 oz) diced tomatoes (<5 g carbs per serving) (1 green)
• 2 Wedges Light Laughing Cow Garlic and Herb Cheese (2 condiments)
• 1/4 cup 2% reduced-fat Mozzarella cheese, shredded (1/4 lean)
• 6.75 oz raw Chicken Breasts, cubed (4.5 oz cooked) (3/4 leaner)
• 2 Tbsp Wishbone Light Italian Dressing (1 healthy fat)
• 1 tbsp Parmesan Cheese, grated (1 condiment)

Directions:

Preheat oven to 350°. Prepare spaghetti squash by oven or microwave. Marinate chicken in Italian dressing. Spray a nonstick skillet with cooking spray. Add chicken and cook thoroughly. Set aside. Saute spaghetti squash, Italian diced tomatoes, and cheese wedges until cheese is melted. Pour squash mixture into a small casserole dish. Spread chicken on top. Sprinkle shredded cheese and Parmesan cheese over chicken. Bake 7-10 minutes or until cheese has melted. Makes 1 serving. Per serving:3 greens, 1 leaner 3 Condiments, and 1 Healthy Fat
