Grilled Cajun Catfish

Yum! Who knew catfish could be healthy?!

INGREDIENTS:

  • 20 oz raw wild catfish – should yield 14 oz cooked (2 Leans)
  • 1/2 tsp thyme leaves (1/2 Condiment)
  • 1/2 tsp black pepper (1 Condiment)
  • 1/4 tsp cayenne red pepper (1/2 Condiment)
  • 1/4 tsp salt (1 Condiment)
  • 1/4 tsp garlic powder (1/2 Condiment)
  • 1/4 tsp onion powder (1/2 Condiment)
  • 1/8 tsp lemon pepper (1/4 Condiment)

DIRECTIONS:

  1. Combine seasonings in a small bowl.
  2. Sprinkle on both sides of the catfish.
  3. Grill 5 minutes on each side or until fish flakes easily. You can also bake it at 375 degrees for 8 to 12 minutes or until fish flakes easily.
